From Kässpätzle to Dim Sum: Nina’s Alpine Fusion Cuisine
In the newly expanded restaurant area of the Ifenblick, guests can follow the passion of chef Nina Meyer. She combines Alpine classics such as Kässpätzle and Kaiserschmarrn with an exotic touch, inspired by Far Eastern flavours and her family’s culinary roots. At the organic mountain hotel Ifenblick, for example, Allgäu Kässpätzle meet miso onions and baked apple. But also dim sum, filled with fresh mince from the organic farm, let the guests dive into a world of taste.
Nina explains her kitchen philosophy: “The different recipes, production methods, spices and ingredients of the various regions always give me ideas for new creations.”
BIOSpitzenköchin Nina Meyer: An attitude towards sustainability
Since September 2021, Nina Meyer has proudly held the title of one of the few organic top chef in Germany. This initiative puts the spotlight on sustainable gastronomy that values organic production and fair food production. “It is important to me that food is produced fairly, for the environment, animals and people,” says Nina Meyer. For her, it goes without saying that a large part of the dishes in her restaurant are vegan and vegetarian.
From the pink kitchen to the cookbook
The open, pink kitchen of the organic mountain hotel is not the only highlight awaiting fans of Nina’s delicacies. On 13 October, her first cookbook “Between Mett, Dim Sum und Kässpätzle” will be published. This work reflects Nina’s unconventional approach to cooking and her deep passion for organic products.
What does the future hold?
The organic mountain hotel Ifenblick will remain exciting in the future. A second conversion phase is planned for summer 2024. In addition to 14 new rooms, a panorama spa will also open with an outdoor pool offering a breathtaking view of the Balderschwang mountains.
