Victor’s Residenz-Hotel Schloss Berg: Victor’s Fine Dining celebrates

On April 1, 2023, the renowned Victor’s Fine Dining by Christian Bau will celebrate its 25th anniversary. Since its opening, the restaurant, which has been awarded three Michelin stars, has become one of the world’s leading gourmet addresses. Christian Bau, originally from the Black Forest, discovered his passion for cooking at the age of 14 and has had impressive successes early in his career.

The success story of Victor’s Residenz-Hotel Schloss Berg

In 1998, Christian Bau was brought to Saarland by Hartmut Ostermann and Susanne Kleehaas to head the gourmet restaurant at Victor’s Residenz-Hotel Schloss Berg as head chef. Already in its opening year, the restaurant received its first Michelin star, followed by the second star the following year. In 2005, Bau advanced to become Germany’s youngest three-star chef – a distinction that Victor’s Fine Dining holds to this day.

The development of “bau.stils

In the early years of his career, Christian Bau impressed with classic French cuisine. However, after several trips to Asia, he developed his unique style, the “bau.stil”. Bau was one of the first chefs to combine French haute cuisine with premium Japanese products.

Innovations and pioneering work in gourmet cuisine

Christian Bau also showed a spirit of innovation by introducing the “carte blanche” concept and the “4 Hands Dinners”. On these special evenings, Bau collaborates with top international chefs to create unique menus that bear the signatures of both chefs. During the Corona pandemic, Bau also developed the “BAU.BOX,” which enabled gourmets to enjoy exclusive dishes in the comfort of their own homes – an innovation that caused a worldwide sensation.

In addition, Bau is planning an exclusive evening for the second half of the year in collaboration with the premium champagne brand KRUG, of which he has been an ambassador since 2021. Several visual updates to the restaurant will also be implemented during the year, including a branded “KRUG Table.”
