Akira Back is the hotel’s largest restaurant and seats 148, including three private areas. The dishes are inspired by Akira Back’s Korean heritage and his modern interpretation of Japanese cuisine influenced by his travels. The menu includes some of star chef Back’s most famous delicacies, designed to be enjoyed together. This includes the “AB Tuna Pizza,” which consists of a paper-thin crispy crust, an umami aioli of ponzu sauce, tuna sashimi, micro shiso and white truffle oil. The stunning high roof and marble spiral staircase leading into the restaurant combine with the appealing interior inspired by the elements of earth, wind and water to stimulate the senses.

Dosa: An intimate culinary theater experience

Dosa offers an intimate setting with 14 seats and professionally served contemporary Korean dishes that use seasonal ingredients and cutting-edge techniques. The concept from Seoul, where star chef Back received his first Michelin star, is now also being presented in London.
